does any one know what middle of the pack times are for each class?

depends on the bike/track...middle of the pack in expert 600 classes at wsmc are sub 28's. Fast guys doing 22's on 600's
CCS at streets i'd say middle of the pack was doing 28's-30's, buttonwillow 2:05's...
when we going racing?

Sorry for the delayed response. Hmmm, MOR track times for the classes would be tough. I can give you some class record laptimes and you could figure adding, say, 5 seconds would get you to midpack or so.
1:21.089 - Toyota 200 (best race lap)
1:21.540 - 250GP
1:21.939 - 600 Superstock (Eric Bostrom racing WSMC in off-season)
1:23.210 - Open Superstock
1:26.440 - 125GP
1:27.370 - Formula Singles
For what it's worth, the best time I know of in 550 Superbike was a low 1:28.
Also, for most fast folks, times on the Big Track and at the Streets are within a couple of seconds -- even though the tracks are totally dissimilar.

shiet, I wish!!!! I've run 23's at streets but 31's the best I mustered at willow so far...next time...dunlops, suspension set up, more power!

There are two categories I would consider racing... and two bikes.
Let's start with the SV650.
Bike: SV650
Classes available: 550SBK, BOTT Middleweight, Formula 2, Solo GTU
Comments:
The field of racers in this category is fairly competitive (especially when you see the occasional Ducati 748/749 fast guy out there *ahem.. Kenny Kopecky*, Mike "Mr. Crash" Solis, etc.) It's a fun category to race in for sure and everyone typically has a very good time running in these classes (550SBK, BOTT MW).
Bike: YZF-R6, CBR600RR, GSXR600, etc.
Classes available: 600 Superstock, 600 ModProd, 650SBK, Formula 2, Formula 1, Solo GTU
Comments:
This category is affectionately known as the "Axe-Murderer" class (except for Solo GTU and possibly F-1). Guys in the 600 class are extremely competitive.. even the mid-pack group can get quite heated! My very first race in 600 class expert and i got to experience what it's like trading paint and smashing elbows and bodies against bodywork in the very first two turns of the race! Fun as hell but not for the faint of heart... this is for sure!
For the budget racer.. perhaps the best category to race in and still be competitive on a mildly tuned racebike would be 500 Superstock and 500 Modified Production. You can run GS500s, EX500s, FZR400s in this class and be quite competitive on a fairly stock bike. These folks are not as crazy as the 600 class but it is still a lot of fun.
Realistically speaking.. unless you are pretty well off $$$-wise, you are probably not going to have enough money to run more than 2 classes consistently per race weekend. Running more than that and you will probably put yourself deep in debt as more races equates to more tires required, gas, wear, entry fees, etc.

For 1000cc at WSMC you have the following:
1. Open Superstock
2. Open Modified Production
3. Open Superbike
4. Formula 1
5. Solo GTO
Remember yalls... when you start as a novice, you will run only 1 race on Sunday until you get out of Novice (which can be achieved by accumulating 30+ points and successfully completing 3 races - 15 points awarded if you win a race).
